Fermentation, creativity and unusual flavour combinations, that’s a reason a lot of people are visiting us. We are cooking pretty much local and Swiss. For me, it is really important you look around you, search for the best and use that! Non the less, we love flavours from all over the world, more in the way of spices or a few vegetables, like different kind of chili’s, lemongrass or ginger.

Unfortunately, we do not have a sea connecting to Switzerland, but I love seafood like langoustine, oyster or North sea crab. That is why you will find this regularly on our menu. But I always make sure that it doesn’t have to travel too far, so all sea products come from the north sea or France. Our kitchen style in one word? „EXCITING“
