INTER SCALDES
When I was working in Restaurant Sens in Switzerland, me and my wife Sanne got an offer we couldn’t refuse. Chef Jannis and his wife Claudia Brevet, owners of the iconic 3-Michelin star restaurant Inter Scaldes in the Netherlands, were looking for a new couple to take over.
Together with Pillows Hotels, we reopened the restaurant and its 12 hotel rooms in November 2023, following a renovation of both the restaurant and garden. After only one year of reopening, we went from zero to two Michelin stars.
Inter Scaldes, Latin for 'between the Scheldes', is located in the vast polders of Zeeland between the East and West Scheldt estuaries. The province and its waters are connected to the restaurant in many ways, reflected in its interior, logo and - of course - its local products.
Birdy’s by Achtien
Together with chef Christian Vogel (aka Birdy), we opened as Birdy's in July 2022 in Brunnen. Christian is the creative chef standing at the cooker and my role is more in the background.
We got to know each other at the Vitznauerhof in restaurant Sens and immediately hit it off. We not only share a passion for cooking, but also many leisure activities such as skiing and wakeboarding.
Plans for the future were made and Birdy's dream of opening his own restaurant became a reality. And things we wouldn’t even dare to dream of happened too: within two years after opening we received one Michelin star and 15 points by Gault & Millau.
